  1.                    MINIATURE LEMON CHEESECAKES

  4. 24 vanilla wafers
  5. 3 c. cottage cheese
  6. 1 c. sugar
  7. 1/4 c. flour
  8. 2 T. lemon juice
  9. 4 eggs 
  10. 1 c. sour cream
  11.  
  12.           Place wafers in foil baking cups.  Process cottage
  13. cheese in blender.  Blend cheese, sugar, flour and lemon juice
  14. with mixer.  Add eggs one at a time.  Stir in sour cream.  Pour
  15. into baking cups.  Bake at 350 degrees for 25 minutes.  Cool
  16. before removing from pans.
